2007 Tom Eddy Cabernet Sauvignons

As some already know, we barrel and bottle-age our wines longer than most…so you don’t have to!  The fact is, our current Cabernet release is a 2003 which means when everyone else is out of the fabulous 2007, we’ll just be getting around to making OURS available.

One reason our wines are so long-lived is because we blend. Taking the wine we make from our different hillside vineyards in Napa Valley, we use blending as  a wonderful tool that allows us to add 5% of this and 12% of that, dialing in a perfect balance of aroma, taste, texture and age-ability.

When looking at a vintage like 2007, one would think it was easy to make blends out of such incredible wines.  But in many ways, a year like 2007 can be the trickiest type of vintage. The wines were so good that we feel it is necessary to make a few “unique” lots in order to show off some of the awesomeness of this vintage. In fact, the 2007 vintage was so dynamic and interesting that it is a great opportunity to present some Single Vineyard and VSR Cabernet Sauvignons.  The Single Vineyard Cabernet is a rare look at what one particular vineyard has to offer and is a perfect expression of that vineyard’s terroir.

Now terroir is a tricky word and one that is not easy to define. In fact, if you asked 100 different winemakers from around the world, “what exactly is terroir?” you might get 100 different answers. To me, terroir is the culmination of soil, climate and vineyard practices that all culminate into the unique chemistry that lies within each grape from that vineyard. It is precisely this distinctive chemistry within the berries that gives each wine made from a Single Vineyard its expressive and one-of-a-kind attributes. Because of these qualities, we feel it is both exciting and interesting to present wines stemming from a single vineyard to let the wine drinker experience this singular terroir on a fundamental level. For those of you that have had the pleasure of drinking our Single Vineyard Cabernets in the past, you know that it is a limited and unique experience.  Textbook terroir.

Our VSR, on the other hand, is a limited production bottling of 3 or 4 of the best barrels from a single vintage. This Very Special Red is the best of the best from only select vintages and each barrel in our entire program is individually tasted.  Only the top, over-the-top, special barrels get put into this program.

This is why I’m lovin’ the 2007 vintage.  The wines are so fantastic that we’ll have some interesting and amazing Single Vineyards, an incredible and very limited VSR and a perfectly balanced flagship, Tom Eddy Cabernet.  I know, everyonelse is on their 2008s. So thanks for being patient. You’ll be justly rewarded!        Jason
