Southern Belle Sweet Potatoes

Aka: Tom’s Sweet Potato Dish

3 cups Sweet Potatoes (boiled, skinned and mashed)
1 cup sugar
1 Tbsp vanilla
½ cup butter

Mix thoroughly and pour into a casserole dish.

Topping:

1 cup Light brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup butter

Mix with a fork thoroughly, then sprinkle on top of the potatoes.

Bake at 350F for 30 minutes and serve.

….In the early days of the wine industry, before winemakers traveled to sell their wines….I found myself traveling to sell wine. My favorite stop was Atlanta, because the food was fantastic and often I could crash on the couch of a colleague whose “southern belle” wife was a great cook who loved southern cooking and anything sweet. I also love anything sweet. That’s when I discovered this deliciously succulent vegetable dish, concocted by my friend’s wife. Think pecan pie and you’re in the ballpark. It is dessert disguised as a healthy vegetable, and no one that I know of has ever said “no” to this offering. A definite crowd pleaser but be sure to buy the beige colored sweet potatoes and not yams, which have a darker skin and an orange center. TE
