HOW TO TELL A GOOD WINE FROM A BAD WINE:
a simple, totally unscientific method.

1) Buy a bottle of red wine.

2) Drink some and leave at least ½ of the wine in both. Maybe buy two.

3) Put the cork back in the bottle and leave on the counter. Do not refrigerate.

4) Try a little in the next 2-3 days or if you’re really disciplined, wait 6-7 days.

The result: if it’s a well made, balanced wine it will have improved and be even more beautiful to drink. If it’s not it will taste “lopsided” with one character (i.e. tannin, alcohol, vinegar) glaring out at you.  No surprise since this “counter experience” is a quick-time simulation of wine aging in the cellar.  Posted by Kerry but I can’t figure out how to change the “posted by Tom” below.  Help!
